Here is a healthy cake recipe that is low fat and full of taste!
Ingredients:
- pistachio nuts, unsalted shelled 5oz
- 4 eggs
- 6oz sugar
- Grease pan with light olive oil
- 5½oz plain yogurt (low fat is best)
- 3fl oz. light olive oil
- 4oz self-rising flour
Low-fat Greek yogurt and mixed berries to decorate.
- Preheat the oven to 315°F and grease a 9in spring-form cake tin with a little light olive oil.
- Whizz the pistachios in a food processor until finely ground and then set aside.
- Eggs and sugar need to be whisked until thick and pale. This usually takes 4-5 minutes using an electric whisk. It’ important that the right consistency is reached.
- Blend the yogurt and olive oil into the egg and sugar mix.
- Sift flour and then using a spatula, fold it into the mixture. Be careful not to over-beat, and then add pistachios.
Pour mixture into greased baking tin and bake for 35-40 minutes or until a toothpick placed in the center comes out clean. Cool in the tin for 10 minutes, and then turn out onto a wire rack to cool completely. Top with yogurt and mixed fresh berries; all your friends will be sure to ask for this healthy cake recipe!
